Specialty Potatoes
Petite Potatoes are the smaller size grades of many other varieties. They are also referred to as baby or new potatoes. They tend to be firmer and have a sweeter flavor then the larger sizes in the same varieties. They are great in salads and are excellent roasted or boiled.
Fingerling Potatoes also come in many different varieties and, therefore, have a variety of skin and flesh color and a range of flavors. Their skin is thin so fingerlings do not require peeling. They are perfect for roasting, boiling, steaming or sautéing.
Though still relatively uncommon, the popularity of purple potatoes is starting to grow. Also referred to as blue potatoes, purples have a round shape with purple skin and a flesh color that can range from deep purple to light lavender or white. They have a subtle nutty flavor and texture that is ideal for roasting, baking or boiling.
